Consumers increasingly prefer and seek food beverages, which, due to their natural characteristics, bring health benefits, both in the prevention of diseases curative power. In this way, production nutraceutical foods beverages gains more importance market. On other hand, because eyes also eat, producing attractive color, texture, appearance, sensory characteristics is a permanent challenge industry. Being able gather healthy items single an even greater challenge. The long list benefits associated with phenolic compounds, such as antioxidant, anticancer, anti-inflammatory, antiaging properties, among others, fully justifies use enrichment various products. Thus, review, we propose summarize potential compounds used ingredients pleasant functional beverages.
